I lived in Kohima, Nagaland for about 6 months. Here's some dishes I liked and disliked. Your taste may differ from mine. I am vegetarian so I couldn't try a lot of their specialty items like smoked pork.
pickle out of something similar to peas, bitter when raw, sour when in pickle. maybe similar or not similar to rajasthani teenth - really enjoyed, one of my favourite items
soyabean spicy pickle (green colour, not akhuni) - nice
many different pickles - liked in general
akhuni (soyabean pickle) - nice once in a while
akhuni fried rice - nice once in a while
radish pickle - nice once in a while
dessert based on job's tear - above average
bamboo shoot - average
anishi - I'm not sure if I've tried it
dried apple - above average once in a while
veg galho - above average once in a while
